    Wancle or Anova?

    Answer: I've only used the Anova, but the immersion tube looks and sounds similar. It came down to the look and feel for me, and I preferred the Avona. I understand that the Avona requires Internet access to function, but I believe I used it without it. I turned it on and manually set the temperature on the device.

    What does it mean when it says it has less power (wattage)?

    Answer: The lower wattage is proportional to the smaller water bath's maximum capacity. The nano can only hold 5 gallons, whereas the 900W version can hold 8 gallons. This would be determined by the ability to circulate as well as the ability to maintain heat in a larger bath without overusing the heating element. Cook, as long as you operate the device within its specified range, there should be no impact. The responses about using less heat and electricity are also deceptive. I see no reason to believe that the nano produces more heat per watt of power. Thus, for the same amount of water, both a 750 and a 900 would use the same amount of power over the cooking period.

    So, do I need to buy a separate vacuum sealing machine to use this?

    Answer: The vacuum sealer will remove all of the air from the bag. The water immersion method of sinking the bag into water with only 1 inch of the seal above the water, then snapping it closed, will remove 99% of the air. I'm not going to spend money on another appliance just to get the last 1% of air out. What I would do is spend an additional $20 on the stainless steel rack that keeps the bags separated and submerged. I didn't buy the rack at first but had mostly positive results. However, after reading a cookbook that advised against simply leaving the bag against the inside wall of the tank, I decided to purchase a rack. The effort was well worth it: placing the bag or bags in the rack allowed the water to circulate completely around the bags, resulting in a consistently uniform result.

    Is it possible to cook without an app? What if you don't have WiFi?

    Answer: We haven't used the app and have cooked a variety of dishes. We completely forgot or were unaware that there was an app. I knew there was a recipe app, so maybe that's the one. However, the Cook app and WiFi are both free.

    Is there a maximum size for a covered, insulated cooler setup with this 1000-watt sous vide cooker that is larger than 50 litres?

    The initial water temperature, food mass, and thermal losses all contribute to the limit. If you're asking because you want to cook a larger quantity of food than a 50-liter insulated container can hold, you should probably look for a commercial unit with a larger heater (maybe 3 to 5 KW). If you're interested because you have a larger insulated cooler and want to use it to cook at low temperatures (below 160°F), I'd run a thermal test on it by filling it with 160°F water, instrumenting it with a type K thermocouple (or several), and watching how quickly the water temperature drops with no added heat. A 1 KW sous vide cooker will supply 3413 BTU/hr, and 50 litres of water is approximately 53 lb, so a 1°F temperature drop is a 53 BTU thermal loss, and if the temperature drops by more than 30–35°F in the first hour, you have too much loss to cook in that container because you need 500 W to cook while the rest of the power goes to compensate for losses. You can scale this to any size container you want to test as long as you keep 500 watts available to heat the food after adjusting for conductive and convective losses.

    What is the maximum temperature? Will it cook at 203 degrees Fahrenheit?

    The maximum temperature is 197 degrees Fahrenheit. 203 is getting close to boiling, so there's probably a problem keeping the water that hot without heating the element to the point of causing flash steam inside the cooker.
