is it able to scan and copy?
The preceding response ("Copies but does not scan") is incorrect.
The iP8720 does not have scan functionality, according to the printer and the user manual.
It is merely a printer, not a fax machine, scanner, or copier.
You'll need a different machine if you need to scan and copy.
The iP8720's major benefit is large-format printing (up to around 13" by 19"). You'd be much better off with a standard-format all-in-one if you don't require that capability.
Is the PIXMA i8720 capable of handling card stock? My current printer kills card stock, and I operate a very modest greetings card business.
The heaviest paper we've printed is Strathmore's 140 lb paper.
Apart from drymounting photo paper to card stock (whose photo quality is unrivalled), the finest paper we've discovered for iP8720 direct printing is Canson Stamping Cards (which outperforms Strathmore's inket offerings hands-down; we found it on Dick Blick's site). I'm not sure if Canson releases the weight of this exact product, but it's definitely about 110 pounds.
Where do you put the 11x17 paper to be fed? Is it possible to put it in the tray beneath or does it have to go on top? And, if it's on top, how many sheets does it hold so I'm not stuck babysitting a print job all day?
Fill the paper with ink.
(1) Pull out the paper support once it has been opened.
(2) Gently pull back the front cover.
Important
Close the disc tray guide (A).
(3) Remove the output tray from the printer.
(4) Open the paper guides (B) by sliding them open, and place the paper in the middle of the rear tray, print side facing you.
(5) Align the paper guides (B) with both sides of the paper stack by sliding them to the left and right.
Do not press down too hard on the paper guides.
It's possible that the paper isn't fed correctly.
Important
Always use portrait orientation while loading paper (C).
Paper jams might occur when you load paper in landscape orientation (D).
NOTE: This printer produces outstanding copies and is of high quality.
It's advisable to go to a copy store and have them do it if you're searching for a production printer that can make a lot of copies.

I believe the maximum number of copies that may be loaded at once is around 25.
Are greeting cards available for printing?

Answer: I've used it to print 140 pound watercolour greeting cards several times.
It works well; about once per 25 calls, it will hang up and you will have to jiggle the card to get it running again.
Will the ink "dry out" or the heads clog if only used a handful of times a year if I use this printer infrequently?
Answer: If you know how to maintain a printer, all you have to do is clean the ink heads when they clog. Any printer like this, regardless of what other people say, will dry up after sitting for months. I've had this printer for 6 years and it will dry up.
Is there a back document feed?
Yes, the back document feed is the sole means to feed the documents into the printer.
What is the largest photo you can print, and can you scan and duplicate it?
Answer:It will print up to 13x19 inches, but I'm not sure if it will print borderless at that size.
For 11x17s and smaller, I know it's borderless.
It doesn't scan or copy anything.
It is only capable of printing.
Is there any ink included? It states it comes with setup ink tanks in the "what's in the package," but it doesn't mean anything to me.
Answer: It comes with ink, but the cartridges are only designed to hold enough to get the printer started.
However, I still have ink remaining after printing roughly six 12 inch × 12 inch strongly coloured t-shirt transfer prints.
I purchased a full set of backup ink tanks along with the printer because the spec specified to install ink tanks.
I believe that printer makers sell printers below cost and then make all of their money from ink sales.
You'll have spent more money on ink than the printer by the time you've replaced the tanks twice on many printers.
Nonetheless, I believe it is an outrage that a new printer does not come with a complete set of tanks.
I understand that this is a wireless printer, but is it possible to connect it in and use it as a wired printer?
Answer: I keep mine plugged in at all times.
