    Is there a difference between the 120 and the 130?

    They are identical but for one significant change. The 120 is divided into three stages (1,2, and 3). On both models, stage 3 is "stropping," which creates the super-fine edge. However, the 130 has only two sharpening processes (1 and 3), skipping stage two, which is generally used to eliminate the burrs formed in stage one. Instead of a stage 2, they term the middle slot of the 130 a "steeled edge," with a whole new blade, and you only use that slot if you wish to optionally generate a microfine serration on the blade edge. If you want to cut meat like a chef's knife, you'll need that steeled edge. That's not what I'm looking for, so I went with the three-stage 120. Go to the chefschoice.com website and watch the two videos for the models 120 and 130. The videos explain this distinction quite effectively.

    Can you use this to sharpen straight razors?

    The answer is NO! Please do not use this sharpener to damage a straight razor! A straight razor requires flat stones to sharpen and a strop to maintain.

    Is this machine suitable for use in Australia? I noted that it is 110v, whereas Australia is 240v. Is a transformer required to use this machine?

    Answer: Unfortunately, this is just 120V; you will need a transformer to use any 120V equipment in a 240V country unless they have a special step-down electric socket (most usually found in the bathroom of good hotels for hair dryers and electric razors).

    What distinguishes the M115 from the 120?

    The chef's choice website explains the distinctions between each model. In my perspective, the 115 model is best suited for 15-degree edges.

    Is it possible to change the degree of sharpening? 15° is used by several Asian and Western knives. Others prefer 20-22°. I don't want to ruin my 15° knives.

    No, the angle cannot be changed, and I believe this one is fixed for a 20o American knife angle. I believe the same firm sells sharpeners for Asian knives.

    Answer: You cannot plug this 110/120 V into a 220/240 V outlet since it will quickly burn. When I originally bought it, I burned it since I didn't notice the 110 V. To operate this model in 220 V locations, you will require an active power adaptor from 220 to 110.
