    Can I use this machine to produce ice cream without using eggs? Is there a recipe book included with the maker?

    The ice cream would become too hard to eat. 1 cup cream, 2 cups half-and-half, 3/4 cup sugar, 1 teaspoon vanilla, 1 teaspoon vodka (which helps with freezing), a pinch of salt, and a pinch of cinnamon are now my go-to ingredients.

    Is this good for yogurt?

    Answer: I make frozen yogurt with it every week, and my recipe is ridiculously simple: 1 quart vanilla (not plain) yogurt (or berries of any type). There is no salt, sugar, milk, or anything else. You only need to leave it on for 20 minutes.

    Is it normal for the mixing paddle to turn? My does not appear to do this; only the container turns.

    Answer: This is the most stupid machine I've ever seen. Instructions are meaningless. So when I put the lid on, the bowl locks and nothing turns, which appears to be by design because there are locks on the lid that lock to the base. When I take the lid off, the bowl turns, but the bowl and paddle are both turning at the same speed, so I have a spinning cold bowl that is NOT mixing anything.

    Can I make numerous batches after the bowl has been frozen once? Or do I need to refreeze the bowl to produce a second batch?

    Answer: I can only make one batch at a time and then have to refreeze the canister for 48 hours before making another, but this could be due to my 25-year-old fridge rather than the ice cream maker. This winter, I plan to prepare numerous batches outside on the picnic table when it's freezing outside and see how long the frozen canister stays frozen!

    Is the Cuisinart ICE-30BC machine easier to use than the Cuisinart ICE-21?

    My machine will not freeze the mixture after a week in the freezer. It tastes like cold milk with ice. Two separate batches produced the same findings. Why?

    Answer: I always make sure my gel is nice and frozen. I make the mixture, place it in a stainless steel bowl, and place it in the freezer for about 30 minutes to an hour. When the mixture thickens, I remove the gel bowl and churn. Additionally, I make sure that my whole milk and heavy cream are very cold because I don't make it the same day I buy milk from the supermarket, so all of this may make or break your ice cream.

    Is the mixing bowl's interior made of stainless steel?

    After the first use, the interior of the mixing bowl became scratched. So I don't believe it's stainless steel.

    Why isn't my lid staying put? It appears that either the paddle is too long or the freezer has expanded. My wife and I both tried it, but it didn't work.

    Answer: We've had this machine for 8 years and make ice cream at least once a month, maybe more depending on holidays and birthdays. I've never had an issue with the freezer part swelling or the paddle not fitting properly, and I've never had an issue with the lid. We wash and dry the freezer bowl before storing it in a zip-lock bag in the freezer for future use. Because we have two freezers, we can produce one gallon at a time.
