    Is the Cuisinart ICE-30BC machine easier to use than the Cuisinart ICE-21?

    My machine will not freeze the mixture after a week in the freezer. It tastes like cold milk with ice. Two separate batches produced the same findings. Why?

    Answer: I always make sure my gel is nice and frozen. I make the mixture, place it in a stainless steel bowl, and place it in the freezer for about 30 minutes to an hour. When the mixture thickens, I remove the gel bowl and churn. Additionally, I make sure that my whole milk and heavy cream are very cold because I don't make it the same day I buy milk from the supermarket, so all of this may make or break your ice cream.

    Is the mixing bowl's interior made of stainless steel?

    After the first use, the interior of the mixing bowl became scratched. So I don't believe it's stainless steel.

    Why isn't my lid staying put? It appears that either the paddle is too long or the freezer has expanded. My wife and I both tried it, but it didn't work.

    Answer: We've had this machine for 8 years and make ice cream at least once a month, maybe more depending on holidays and birthdays. I've never had an issue with the freezer part swelling or the paddle not fitting properly, and I've never had an issue with the lid. We wash and dry the freezer bowl before storing it in a zip-lock bag in the freezer for future use. Because we have two freezers, we can produce one gallon at a time.

    Has anyone ever attempted to make gelato? What happens next?

    Answer: That's how I do it. 2 quarts of thick cream 3 quarts of whole milk 1 pound of sugar Heat the 2 cups of heavy cream and the 2 cups of whole milk until they are simmering but not boiling. Stir the remaining cup of whole milk with 1 cup of sugar until completely dissolved. When the milk and sugar mixture is simmering, add it and continue to cook for at least 5 minutes. Let it rest while regularly mixing it. Refrigerate and constantly mix. Then place it in the freezer for 1 to 2 hours, or until it is nearly frozen. It will become thicker.

    Can this machine produce yogurt?

    Answer: If you use the ice cream setting, it can make frozen yogurt, according to the description.Cook's has a great frozen ginger yogurt recipe that includes suggestions on how to keep it from tasting chalky or overly "icy."

    Is it necessary to place the bowl in the freezer, and if so, for how long? Can I make 5 (2 QT) batches at once, or do I need to refreeze the freezer bowl?

    Answer: Freeze for at least 24 hours to ensure complete freezing. You can only create one batch at a time before the bowl needs to be refrozen.

    I'm torn between the ICE-70 (Cool Creations) and the ICE-30BC (Pure Indulgence). Could someone please clarify the distinction between these?

    The ICE-70 is larger, has a built-in timer, and three different settings to choose from (sorbet, gelato, and ice cream). Yet, there are just two speeds. The sorbet and ice cream speeds are the same. The gelato setting is slower, but the volume of the end result is the same. I have the ICE-70, but I would consider purchasing the ICE-30BC.
