I've read the majority of the reviews, and the majority of them are positive in terms of performance. What are buyers' thoughts on the long term; six months, a year?

Answer: I've had mine for a little over two years. Used seldom, perhaps once or twice a month. It worked fine until the pump broke down. $159 includes delivery. Get the warranty, as a word of advise!

What is the best way to seal chicken?

Answer: We seal fresh chicken breasts, cooked chicken in various forms, chicken stock, and, for that matter, full main (chicken) dishes... Cut the bag to the desired size and close the opening. Place chicken inside the container. Press the button to seal the package... With a sharpie, write "chicken" and the date on the end and place in the freezer. I'm sorry if I misunderstood your inquiry. If you're talking about a whole chicken, I wouldn't do it since you're trapping air inside the cavity. First, shred the chicken. This sealer isn't the ideal choice for sealing things with a lot of fluids or sauce, yet it can be done. We use an impulse sealer for liquids (chicken stock) and other items with a lot of liquid or sauce. Another option is to first freeze the dish (or stock). Things like frozen chicken pot pies are stored once they have been frozen. In fact, we freeze them and then seal them in pyrex bowls!

Is this something you'd use for freshly filed fish?

No, I've never done anything like that with it. I'm assuming you want to freeze the fish after vacuum sealing, which is why vacuum sealing is necessary. If my assumption is right, the next step is as follows: 1. Make sure there are no pin bones in the fillet. 2. Rinse thoroughly and pat dry with paper towels. 3. Place the fillet in a vacuum seal bag and freeze it flat in the freezer until it is very solid. 4. Take out of the freezer and vacuum seal as usual. 5. Place back in the freezer. I hope this information is useful. This method is also effective with steaks and pre-made hamburgers (minus the pin bones of course).

Answer: The 2600 is a newer model with a 1" larger sealing bar. Pumps look to be same.

Answer: YES, BUT YOU MUST SEAL THE BOTTOM AFTER CUTTING THE SIZE YOU REQUIRE, FILL IT UP, AND SEAL THE TOP.

Is it possible to extend the vacuum sealing period beyond 3 seconds?

No, the sealing time is pre-programmed in the software. However, I've discovered that the pre-programmed sealing time is more than adequate for my needs. I use and seal large (thick) bags all of the time, and they always seal well. PLUS Even with wet, greasey, or greasy bags, this machine will create flawless vacuum tight seals. Mine is fantastic; it's really quick and simple to use. Actually, it's foolproof.
